Currently, I am working at THE MANOR HOTEL by JA which is in Dubai. As a Chef de Partie, my responsibility is to take care of the food cost and food stock so that the production can be monitored to reduce the wastage to the minimum. One of the major responsibilities is to maintain all the traceability records up-to-date to avoid all kinds of Hazards. I have a team of 4 crew members as a supervisor I have to conduct training, do the daily briefing, and do food trails to maintain the standards of the recipes and the presentation is always the same for each plate served. Maintain HACCP all time and do online Dubai Municipality record for food traceability.
